Storing Red Meat

In the US, we’re starting to buy more like they do in Europe – on a daily basis.

That’s fine, but if you don’t have the time or prefer to buy all your meat for the week, you can freeze part of it and put the rest into your fridge’s meat drawer.

A good fresh piece of meat – a steak or roast that was freshly cut today – is good for about four days.  Just in its own package.  But keep in mind that most of the meat that you get in the supermarket is probably already about two weeks old.  So if they’re cutting that piece for you today, I wouldn’t keep it more than four days.

If you know that you’re not going to use it within 3 days, then wrap it and freeze it in a vacuum bag with as much of the air sucked out as possible, because it’s the air that causes freezer burn.
